Balloons, Valleys and Dinner in Göreme
Göreme packs a lot into a small town, and the activities fall into a few groups: things you do at dawn, things you do on foot, things with a ticket and things you eat. Here is how each one works.
Dawn: balloon flights
Balloon flights run over the valleys at sunrise and are regulated by SHGM, Turkey’s civil aviation authority. They go only when the weather allows, and on some mornings the regulator grounds every balloon in the region. Cancellations are common enough that the press reported multi-day suspensions in February and March 2026. Book a licensed operator that refunds or rebooks for weather, and keep 2 or 3 mornings free. In June 2025 two balloons made hard landings in strong wind near the Ihlara Valley, and a pilot died so weather matters, and a good safety record counts when you choose an operator.
On foot: the valleys
Four valleys are free to walk: Rose Valley (Güllüdere), Red Valley (Kızılçukur), Pigeon Valley (Güvercinlik Vadisi), which lies between Göreme and Uçhisar, and Love Valley (Bağlıdere). Wear sturdy shoes, because the soft tuff crumbles and trails can be loose or slippery. Carry water, and do not climb fairy chimneys or enter the dovecotes.
With a ticket: the museum and the Dark Church
The Göreme Open-Air Museum is about 1.5 km from the village and open daily 08:00 to 17:45, with the ticket office closing at 17:15. A night session runs 18:00 to 23:00. The Dark Church (Karanlık Kilise) sells its own separate ticket. Guides quote about EUR 20 for the main site and about EUR 6 for the Dark Church, but check at the gate, since lira prices change. The ministry page has the hours.
Horse riding and quad tours
Both are sold by many Göreme operators, with helmets and a short briefing advertised for quad tours. Choose an operator that supplies helmets, and that visibly looks after its animals if you are riding.
Paragliding
Tandem flights launch from Aşıklı Hill, and companies collect passengers in Göreme. Check that the company is licensed and ask what happens if wind stops the flight.
Eating: testi kebabı
Testi kebabı, the pottery kebab, arrives in a clay pot that is broken open at the table. Breaking the pot is part of the show, and the dish is a widely documented culinary tradition.
